Recipe: Fava Greens Sauteed with Garlic and Lemon.


We saw something a little unusual at the market this past weekend: Fava Greens. Now, we've cooked with fava beans in the past, but we've certainly never cooked fava greens. We spotted the greens and the recipe at the Denison Farms booth and were quite intrigued. Lucky for us, the folks at Denison were cooking up the fava greens at their booth and had samples available. The greens were absolutely delicious! If you are at the market this weekend, we recommend that you stop by Denison's booth and grab a few handful of fava greens. FAVA GREENS WITH GARLIC AND LEMON Ingredients: 1 Tbs. butter 1 Tbs. olive ol 3-5 cloves fresh garlic, sliced thinly 1/2 tsp. salt 1/4 lb of Fava greens, rinsed, drained, and coarsely chopped 2 Tbs. lemon juice Method: Gently warm the butter and olive oil over medium-low heat. Soften garlic in warm oil for 2-3 minutes (do not allow garlic to brown). Then turn the heat to medium-high, and add fava greens, salt, and lemon juice and sautee, stirring frequently for 3 minutes, or until the greens are wilted. Add up to 1 tablespoons of water if the greens start to scorch. (Note: the lemon juice will turn some of the leaves brown, but the flavor is so nice, we couldn't leave it out!).
